The Domaine, with it 26 hectars, is situated in the county of Laurens in the center of the Faugère.
The vineyards constist of:
8 hectars of Syrah
7,5 hectars of Grenache
4 hectars of old Carignan
3 hectars of old Cinsault
2,5 hectars of Mouvèdre
1 Roussane and grenache blanc
To improve our wine-quality we make a green vintage, were we cut a part of our vine and some of the leafs. So all the energy is concentrated on selected branches of grapes that finally give the best 20 hl/ha.
When the wine arrives on our Domaine, the wine is controlled for resting leafs and faulty grapes. Before the grapes arrive in the cask they are separated from the Stiel. There they are fermented until the aimed colours ans aromes are developped. For red wines this process takes about 21 days. For the fermentation of the Carignan the CO2-fermentation is used. This is the same process like for the celebrated "Beaujolais" where the unbroken grapes are saturated with CO2. With this technic the fruits are fermented in itself. This process supports the developpment of very fruity aromes.
For the rosé the winemaking process is different. When the juice has reached its aimed colour he is filled in another cask were he is cooled down to 8°. To keep the difference of temperature und cask as small as possible, our grapes were cut in the morning hours.
